Low Carb Vitality Quiche



Start the new year right! Support your weight loss or weight maintenance goals with yummy Quiche! 

My whole family loves it.   If you don't like certain veggies then just replace them with ones you do like!  This particular recipe is low carb and not watery.  It hits the spot.. warm or straight from the fridge.  You can cut up individual portions (for us that is 1/4 of the quiche) and freeze in baggies.   I like to make two or four at a time so I can freeze some.  Make this the day before Christmas or as a healthy addition to a potluck.  Eat it for breakfast, lunch, or dinner!

Here is the basic recipe which you can adapt to your own preferences...

BASIC QUICHE RATIO

4-5 eggs 
1/2c heavy cream or half n half (you can use milk or almond milk but it won't be as rich)
1/2c. mayo (key ingredient)
1 1/2 c. cheese (shred it yourself)
1/2 - 1c. cooked meat
1/2 - 1c. finely diced, cooked veggies

Seasonings like a splash of Worcestershire, dash of salt & pepper, garlic granules, steak seasoning or Young Living Vitality oils (Try 2 drops Basil Vitality™, 1 drop Oregano Vitality™, and 1 drop Rosemary Vitality™, etc. We have a whole line of oils for cooking.)


Preheat oven to 425'

Grease pie plate for crustless quiche or prepare crust of your choice (low carb or regular)

Beat eggs, cream, mayo and seasonings together in a large bowl.

Stir in remaining ingredients.

Pour into crust and sort of pat the filling around to evenly distribute the chunks.

Sprinkle with more cheese.

Bake for 15 minutes.  Reduce heat to 350' and continue baking for 30 more minutes or until knife inserted in center comes out clean.

Cool 10 minutes before serving.


***VARIATIONS
     
*Spinach, ground beef, bacon, cheddar

*Spinach, sausage, swiss cheese

*Black beans, taco seasoning, avocado, olives, chilis etc for mexican theme.  Black soybeans are low in carbs.
*Ham & broccoli (with this one I use 1/2 c diced ham and 2 cup broccoli cause ham is salty)

*Green Chili & Chicken

*Bacon Cheeseburger- 4 slices of cooked bacon, chopped. 1 cup ground beef, cooked, diced onion.


ETC.
*You can also double the recipe, bake it the same in a cake pan and skip the crust.
