Kim's Peppermint Brownies...INVIGORATING!
Love love love these brownies! This is my new favorite recipe!

Now normally, you would not want to HEAT your oils if you want to retain full medicinal benefit but you just gotta make these brownies! While mixing, you will be energized and totally invigorated, haha.
KIM'S PEPPERMINT BROWNIES
1 c. melted butter
3/4 c. cocoa powder
2 c. sugar
4 eggs
1 tsp vanilla extract
1 1/3 c. flour
1 tsp. baking powder
1/2 tsp. salt
4-6 drops Young Living peppermint essential oil (I like a lot so I used 7 drops)
2 cups chocolate chips (I like dark chocolate)
1/2 cup chopped walnuts (optional)
Preheat oven to 350'F. Spray 13"x9" cake pan.
Stir together flour, baking powder, and salt. Set aside.
Stir together butter, sugar, and cocoa in a bowl.
Add eggs; beat well with spoon.
Add vanilla and peppermint.
Gradually add flour mixture, beating until well blended.
Stir in chocolate chips and optional walnuts.
Spread evenly in pan and bake 30-35 minutes OR until brownies begin to pull away from pan slightly. (We cook them even less because we like them more gooey. Maybe 25 min but ovens vary so check them and don't overbake!)
Share with friends! My 21 yr daughter loves these so much that she requested this instead of birthday cake. I also enjoy giving this recipe along with a YL peppermint sample as gifts in mugs or cards at Christmas :)
